BING CHERRY BEET SALAD
Fresh Bing cherries, sweet onion, yellow and orange peppers with beets marinated in a Balsamic, grape seed and maple syrup dressing! This is one of those salads you can’t stop eating!
Makes 7 cups
1 lb. ripe, fresh Bing cherries, pitted and halved
1/2 sweet onion, cut in half, then sliced paper-thin into quarter rings
1 lg. fresh sweet yellow pepper, cut into 1/2 inch squares
1 lg. fresh sweet orange pepper, cut into 1/2 inch squares
2, 14.5 oz. cans whole beets, drained and cut into 4ths or 6ths depending on size (about the size of a cherry half)
1 c. Balsamic vinegar
1/3 c. grape seed oil
2/3 c. grade A maple syrup
1 t. salt
Combine all ingredients in large bowl. Stir well, cover and refrigerate overnight.
Serve alone or as a salad accompaniment to a main dish, or on a buffet.
Notes: The flavors are as brilliant as the colors in this marinated salad, that people will be asking the recipe for.
When purchasing the cherries, go for the darker the better.
If you want to roast fresh beets, by all means do.
